Paulina Lopez Red Honey

Coffees from Huehuetenango in Guatemala often carry a distinctive flavor profile, sweet and rich with high but balanced acidities. Its these characteristics that we were looking for on our first trip to Guatemala 3 years ago.

Through our close associate and friend Nadine Rasch we’ve been able to build a relationship with the Lopez family and are proud to be able to feature both a honey and a washed lot from Finca el Mirador again this season. Nadine introduced us to Paulina and her family after our first cupping session in Guatemala city. Paulinas coffees dominated an already strong table and marked her out as a producer that we were keen to meet with and explore the possibility of a long term buying relationship.

For the past 3 seasons we’ve travelled out to meet and work with Nadine and Paulina in Guatemala; often cupping through dozens of offer samples from various days harvests before finding and settling on the lots for that season.

This red honey lot is exceptional and is everything that we’ve come to expect from such a skillful producer. Sweet, juicy, clean and balanced; we’ve found that a starting dose for espresso of 18.5g with a 35 second extraction and 30g yield results in the sweetest most balanced shots. Expect to find an abundance of red fruits in the cup and a long clean white sugar finish.
