Kochere is a small department within the larger and more well known Yirgacheffe region. Whilst this particular coffee displays the classic Yirgacheffe flavour profile of deep florals and bright citric acidity, Kochere is better known for having its own distinct and unique flavours. Black tea and stone fruits define the regional terroir and this washed lot displays these characteristics superbly.
Its hard for us to not get excited by new arrival Ethiopian coffees as they form such an intrinsic part of offer and are a delight to roast. Plans are already afoot for the 2019 harvest where we intend to focus in our buying with the aim of bringing more of these unique lots of coffee.
We’ve been brewing this coffee on V60 in our QC lab, emphasising the beautiful floral complexity the region is known for. Starting with an initial dose of 18 grams ground fine, we bloom the coffee with 50g of water, give the bed a nice big stir to ensure even wetting, and wait for 30 seconds. We then pour the next 250g in one continuous pour, aiming to finish at 1:30m before drawing down. Light, delicate and tea-like this coffee is ideal for an afternoon pick me up.
