Jamison Savage, who sourced and processed this lot of geisha, began planting the rare trees nearly a decade ago on his small farm near the Costa Rican border in the Boquete region of Panama. In that time, he has gained international acclaim for his spectacular 90+ point coffees, grown and processed to the highest quality standards in the industry. Caravan Coffee Roasters have been working with Jamison for a number of years, and we are thrilled to bring yet another of his fantastic coffees to our offer list this winter.
For Anthem, Jamison has partnered with a select group of his neighbors and friends, collecting their ripest cherries, which were then processed in the natural style on Jamison’s African bed system. Careful monitoring of temperature, humidity, and airflow was taken to ensure the coffees were dried evenly and slowly, absorbing the maximum amount of complex sugars from the cherries before being hulled, sorted, and placed into the climate-controlled warehouse.
The resulting cup is a stunningly sweet and sparkling clean, with some of the most memorable flavours you’ll ever taste in a coffee.
With a coffee of this caliber, with such complex flavours, we recommend a pour over brewer. Start with a ratio of 1g of fresh ground coffee for every 15 mls of filtered water, just off boil. Grind size should match the brew method, aiming for a total brew time of 2:30 to 3 minutes.
