Our second lot this season from Don Francisco is specially selected from one day’s pickings of our ‘Reds’ coffee; currently used in our Market Blend. Identified by our buying team as being a cut above the rest, it was immediately put aside for further cuppings and analysis. Sweeter, brighter and more complex, this microlot shines as an espresso and is a great representation of Nicaraguan coffees very singular character.

Don Francisco’s coffee is harvested a full two months later than neighbouring farms in Jinotega; due to the higher altitude at which he grows and a natural microclimate with increased cloud cover. These two critical differences ensure that the cherry on Don Francisco’s tress mature at a much slower rate, allowing them to have critical extra time to collect nutrients from the rich volcanic soil.

  


BREWING GUIDE

 

This is an incredibly rich and sweet espresso with enough body to cut through milk whilst remaining complex enough to be enjoyed as a straight black shot. 19g is a great place to start when brewing this coffee. Look to extract around 30 -33g over a 30 second period for best results.

Alternatively, this coffee makes a great French press for the home user. Deep, sweet and clean with plenty of body. Look to use 30g ground reasonably coarse when brewing with 500ml fresh water. Brew for at least 4 minutes before slamming the plunger and decant immediately to avoid further extraction.
